Undoubtedly, potatoes play an extremely important role in agriculture today and are one of the main plant-based food sources around the globe. Currently, they are cultivated in over 160 countries around the world. By far most potatoes are grown in China and India. And although its consumption has been declining in recent years (especially in European countries), it is still the basis of cuisine in many countries around the world, including Poland, of course. According to many researchers, the maximization of potato production in the 19th century caused a significant increase in the population of the European continent.
The potato is a vegetable with a high starch content, which is a complex carbohydrate. However, its content varies depending on the potato variety. The following varieties have the most: Ursus, Ibiza, and Gloria.
Contrary to many dietary myths, the potato is a low-calorie vegetable, and at the same time distinguished by a high satiety index. Nutritionists consider potatoes to be a valuable source of vitamin C (approx. 20 mg/100 g of fresh weight), and B vitamins, including folic acid. They also contain numerous minerals with a deacidifying effect on the body.
The great advantage of this vegetable is the possibility of long storage. In a dark and cool room, they can be stored for up to a year.
